BBQ Brisket Reuben Sandwich

Ingredients:

  • ¼ - ½ lbs. brisket, fat trimmed
  • 2 slices rye bread
  • 4 slices Swiss cheese
  • Butter as needed
  • ¼ - ½ C sauerkraut
  • 1 C mayonnaise
  • 1 T onion, chopped
  • ¼ C chipotle ketchup
  • 2 tsp Worcestershire sauce
  • 2 tsp hot sauce
  • ¼ C horseradish
  • ¼ tsp paprika
  • Salt to taste

 

For the Russian Dressing:

 

  1. Combine the mayonnaise plus the next 7 ingredients in a bowl and mix until combined. Taste and adjust as needed per personal preferences. Refrigerate sauce until ready to use

 

For the Sandwich:

 

  1. Preheat griddle to 325 degrees. Meanwhile, begin to prep the sandwich by slathering the prepared Russian dressing onto two slices of rye bread. Next, add 2 pieces of swiss cheese to both slices as well. Add a healthy scoop of sauerkraut to one of the slices, and top the same piece with brisket. Place the other prepared slice of bread on top of the brisket. The sandwich is now ready to be cooked!
  2. Once the griddle has reached the desired temperature, add a few pats of butter and melt. Place the sandwich on the griddle and cook until both sides have browned and the cheese has melted, flipping as needed.
  3. Remove the sandwich from the grill and turn off the burners. Slice the sandwich in half and serve. Enjoy!
