Griddles

Why should I season my griddle?

Seasoning prepares the griddle surface for use with a coating to prevent rust and to create a stick-resistant surface. Seasoning, over time and after repeated use, produces a shiny black cooking

surface. As you continue to use and season your griddle surface, the more stick-resistant it will become.

How do I season my griddle?

Seasoning Checklist:

• Metal scraper, spatula or tongs

• Cooking oil: flax seed, vegetable, olive, peanut, canola, coconut, flax or sesame oil.

• Paper towels

First time seasoning:

1. Using some paper towels or rag, clean the griddle surface with some warm soapy water. This will help remove any particles from the factory or shipping and prepare your griddle surface for seasoning. Dry the griddle surface immediately after.

2. Set the temperature to SEAR and allow to warm up for about 5 minutes. Apply some cooking oil to the griddle top and evenly coat the entire surface using paper towels or a rag.

Be sure to also coat the inside and outside of the griddle top as well.

3. Allow the oil to cook onto the griddle top for several minutes. You will see the surface begin to smoke and the cooking surface with darken/discolor.

4. Keep burning on SEAR until the smoke stops.

5. When the smoke starts to diminish, apply another coat of oil to all the same areas listed above. It is recommended to coat a minimum of 3-4 times.

6. Once the last coat has been applied and smoking has diminished, turn off the griddle and allow to cool. Once cooled, you can lower the lid and put on griddle cover.

Congratulations! Now your LoCo Griddle is seasoned and ready for use.

Cleaning after use:

1. Turn griddle on to 375F-400F

2. Remove as much residue as possible with a metal scraper or spatula, then wipe the griddle surface and inner and outer walls with paper towels until clean.

*For stubborn, stuck-on residue, apply cooking oil or hot water to boil the residue off. If necessary, steel wool may be used to scrub residue away. Repeat this step as necessary.

3. Apply an even coat of cooking oil to the griddle surface and inner and outer walls with paper towels. Leave the griddle on for about 5 minutes, then turn off and allow to cool before storing.

How do I fix a rusty griddle surface?

1. Light the burners and turn control knobs to SEAR for approximately 10 minutes, then turn off.

2. While the griddle surface is still warm, use a metal scraper or spatula to remove as much rust as you can from the griddle surface and the inner and outer walls.

3. Apply a liberal amount of cooking oil to the griddle surface and scrub with steel wool.

Continue to apply oil as needed.

4. Wipe the griddle surface and the inner and outer walls with paper towels.

5. Repeat steps 2-4 until no rust is apparent on paper towels

Kettle Grills

What size power cord/adapter does the Loco Kettle require?

The Power Cord specs for the Loco Kettle are; Input power 120VAC Output power 12VDC @ 2000 ma Center positive 6.5 mm x 9mm barrel plug for a 3mm center pin in its mating socket.

Is it safe to use the LoCo Kettle on a balcony?

When cooking on the LoCo Kettle the appliance must always be on a level, stable, noncombustible surface such as brick, concrete or dirt and in an area free of combustible materials. Never use this appliance on or around surfaces such as asphalt, wood, dry grass or leaves, vinyl or plastic. These surfaces are combustible and may melt or catch fire. Also always maintain proper clearances from combustible construction. The minimum clearance to the sides and back of the appliance is 36” (914 mm) from any structure or combustible material. Do not locate or use the appliance under overhead combustible construction.

Fryers

What type of oil is recommended?

• We recommend peanut oil for its high smoke point and mild flavor

• Canola oil and vegetable oil can also be used

• Do not use olive oil, grapeseed oil, or any oil with a low flashpoint

Is it safe to use the LoCo Kettle on a balcony?

We do not recommend storing your oil in the fryer as this will cause build up. Allow your oil to cool completely, strain and store in a tightly closed container in a cool dark place for best results.

Can I reuse the oil in my fryer?

Yes, you can reuse it. But there are a few rules to follow:

Storing

• Allow oil to cool to room temperature

• Filter oil through multiple layers of cheesecloth, paper coffee filter etc. – This is to remove any left behind particles from item(s) fried

• Store the oil in an airtight container in a container in a cool dark location

• Do not store used oil for more than six months

Boilers

Can I use the boiler as a fryer?

Unfortunately, the LoCo boiler cannot be used as a fryer. Even if the pot was to be switched to a more suitable pot, it would remain unsafe to use the burners and stand from the Boil Kit as aturkey fryer. The boiling unit does not have the SmartTemp heat sensor on it to keep the oil from overheating, creating a dangerous cooking environment.

How should I clean my boiler?

Suggested cleaning materials:

• Warm water

• Mild dishwashing liquid detergent

• Soft, nylon cleaning pad

Instructions:

***Before cleaning turn off the boiler at the regulator / manual valve then at the gas cylinder.

Check that there is no flame, gas smell and the valves are in off position. Next, make sure unit is properly disconnected from propane tank prior to any cleaning.

• Before removing the water, let the water / unit completely cool down to 115˚F or 46˚C. As a precaution use protective heat resistant gloves. Drain water from Boiling Kit or Cart Boiler. Any remaining water can be scooped from the boiler and placed in an approved container.

• Everything that was in contact with the food must be hand washed with warm soapy water and nylon pad. If the boiler has black soot cooked on to the outside finish, scrub this down with a steel wool scouring pad. DO NOT spray oven cleaner on aluminum pots to remove grease or soot. It will cause the finish to become dull. If food remains stuck to the aluminum basket add hot water and let it soak, after cooling, scrub with steel wool. If hard water causes darkening on the interior of your boiler, fill to the level of the darkened area with a water and cream of tartar or vinegar solution (mixed concentration of three cups of water to one tablespoon cream of tartar or vinegar). Boil five to ten minutes.

• Confirm that all components are completely dry before using or placing in storage.

• Store all components in a dry, covered location when not in use with the cylinder not attached.

***Clean the entire appliance each year and tighten all hardware on a regular basis (1-2 times a year or more depending on amount of use)

What size is the diameter of the drain valve on boiling carts?

The drain valve on the LoCo Boiling Carts measures 2" diameter.

Pots/Stands

What are your pots made of?

They are made of aluminum.

What is the BTU of the LoCo High Pressure Stand?

54,000 BTU heat output.

Other/Misc.

Why does the funnel have a P65 lead warning? What part of this funnel might contain lead? Is it considered food safe?

The LoCo funnel is made of metal and requires the Prop 65 notation to comply with California legislation. It is safe for use in cooking. Proposition 65, is the name of a piece of legislation that was passed in 1986 by the state of California. The aim of Prop 65 was, in theory, to help Californians make informed decisions on the health risk factors of products they use. Every manufacturer needs to display this warning if they are selling products in California that contain trace amounts of substances that are deemed as risks to health.
