Why should I season my griddle?
Seasoning prepares the griddle surface for use with a coating to prevent rust and to create a stick-resistant surface. Seasoning, over time and after repeated use, produces a shiny black cooking
surface. As you continue to use and season your griddle surface, the more stick-resistant it will become.
How do I season my griddle?
Seasoning Checklist:
• Metal scraper, spatula or tongs
• Cooking oil: flax seed, vegetable, olive, peanut, canola, coconut, flax or sesame oil.
• Paper towels
First time seasoning:
1. Using some paper towels or rag, clean the griddle surface with some warm soapy water. This
will help remove any particles from the factory or shipping and prepare your griddle surface
for seasoning. Dry the griddle surface immediately after.
2. Set the temperature to SEAR and allow to warm up for about 5 minutes. Apply some
cooking oil to the griddle top and evenly coat the entire surface using paper towels or a rag.
Be sure to also coat the inside and outside of the griddle top as well.
3. Allow the oil to cook onto the griddle top for several minutes. You will see the surface begin
to smoke and the cooking surface with darken/discolor.
4. Keep burning on SEAR until the smoke stops.
5. When the smoke starts to diminish, apply another coat of oil to all the same areas listed
above. It is recommended to coat a minimum of 3-4 times.
6. Once the last coat has been applied and smoking has diminished, turn off the griddle and
allow to cool. Once cooled, you can lower the lid and put on griddle cover.
Congratulations! Now your LoCo Griddle is seasoned and ready for use.
Cleaning after use:
1. Turn griddle on to 375F-400F
2. Remove as much residue as possible with a metal scraper or spatula, then wipe the griddle
surface and inner and outer walls with paper towels until clean. *For stubborn, stuck-on
residue, apply cooking oil or hot water to boil the residue off. If necessary, steel wool may be used to scrub residue away. Repeat this step as necessary.
3. Apply an even coat of cooking oil to the griddle surface and inner and outer walls with paper towels. Leave the griddle on for about 5 minutes, then turn off and allow to cool before storing.
How do I fix a rusty griddle surface?
1. Light the burners and turn control knobs to SEAR for approximately 10 minutes, then turn
off.
2. While the griddle surface is still warm, use a metal scraper or spatula to remove as much rust
as you can from the griddle surface and the inner and outer walls.
3. Apply a liberal amount of cooking oil to the griddle surface and scrub with steel wool.
Continue to apply oil as needed.
4. Wipe the griddle surface and the inner and outer walls with paper towels.
5. Repeat steps 2-4 until no rust is apparent on paper towels
Why is my griddle changing a darker color?
It is normal for the griddle to change color over time. The darkening of the surface indicates better seasoning, which results in better performance of your griddle.
What type of tools can I use with my griddle?
We recommend using our line of metal griddle accessories. We do not recommend the use of plastic tools as they may warp and melt.
How do I keep my griddle from warping?
Warping is rare on a LoCo griddle, but following these tips will help you avoid it.
- Extreme temperature changes can cause warping. Avoid preheating your griddle longer than 10-15 minutes, especially if using chilled food.
- Only use small squirts of water (using a squeeze bottle) on sticky parts of the cook surface.
- Do not use large quantities of water while cleaning your griddle.
- Do not put frozen food on a hot griddle top.
How does the weather impact griddling?
- Cold weather: plan to add some time to your cook.
- Wind: try turning the griddle away from the wind to prevent the burners from blowing out.
- Rain and snow: due to the open-lid nature of griddling, it is not recommended to griddle in the rain or snow to prevent food from getting wet and grease from splashing out from the cook surface.
Can I use a pan on my griddle?
Using a pan or skillet on the griddle is safe and gives you the ability to make sauces, glazes, sides, or even pasta on the griddle. This can be perfect for making a bourbon glaze or Cajun cream sauce while your main protein cooks in another zone. We recommend placing the pan you plan on using on the griddle as early as you can, as it does take time to heat up since you are essentially heating up 2 cooking surfaces instead of 1.
What is the paint finish on the griddles?
The paint is high temperature powder coat. The thickness of the powder coat is 60~80UM (Micron)
What is the griddle surface made of?
The cooktop is made of milled steel and the pre-seasoning is a baked on food grade plant-based oil.
How thick is the griddle cooktop?
The cooktop is 4.2 mm thick
Once the griddle is assembled will it be damaged if laid down on its back for transport?
Yes, you can transport an assembled griddle without causing damage and lay the cart on its back.
When transporting an assembled product, care should always be used to make sure it will not suffer damage. The best way to transport the Digital Griddle is to remove the cooking surface and lid. This will allow for two convenient pieces to handle.
Can you light the griddle without plugging it in?
No, the digital griddle must have a power source to operate. Our Classic griddle might better suited for your needs if you don’t want to plug it in.
Is there a reset button for the griddle?
There is no reset button. To reset an individual control knob simply rotate it to the off position and then relight as usual.
Why do the lights on my griddle dials light up sometimes but sometimes turn off mid-cook?
This is caused by the flame sensor detecting an absence of flame. Either it needs to be adjusted or perhaps wind blew the flame away from the sensor for a short amount of time.
Can I get heavier hinges for the lid of my LoCo griddle?

Can I use a power inverter instead of running a long extension cord?
Absolutely, as long as it provides 120 Volts AC at a minimum of 2 Amps current
Can I convert to Natural Gas?
Our products are designed for propane only, and we do not recommend converting to natural gas.
The units have not been performance tested for anything but propane use.
How many hours can I cook with a tank of propane?
A propane tank holds about 4.2 gallons and there's about 91k BTUs per gallon. A burner is 16k BTUs. 91k/16k = 5.69 hours per gallon, so a little more than 23 1/2 hours of cooking per burner with a full tank.
