Start your morning with a warm, delicious combination of classic breakfast favorites-cinnamon roll pancakes! Made right on the LoCo griddle, these fluffy pancakes are swirled with a sweet cinnamon filling and topped with a creamy glaze, giving you the irresistible taste of cinnamon rolls in every bite.
Ingredients:
For pancakes-
- 1 ½ cups all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1/2 teaspoon of fine sea or table salt
- 1 ¼ cups milk
- 1 large egg
- 5 tablespoons (70g) unsalted butter
- 2 teaspoons vanilla extract
For filling-
- 1/3 cup melted butter
- 3/4 cup packed brown sugar
- 1 tbsp cinnamon
For icing-
- 2 cups powdered sugar (aka confectioner's sugar)
- 2 tablespoon butter melted
- 2 teaspoon vanilla extract
- 4 tablespoon milk
Directions:
- Preheat your LoCo griddle to 400 degrees.
- Melt the butter and set it aside. In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together milk, egg, melted butter and vanilla extract.
- Create a well in the center of your dry ingredients.
- Pour in the milk mixture and stir gently with a fork until the flour is just incorporated. A few small lumps are fine. As the batter sits, it will start to bubble.
- Mix the filling ingredients up and put in a baggie. Cut a hole in the corner for easy squeezing when you’re ready to use it.
- For the icing, melt the butter. In a mixing bowl, combine powdered sugar, butter, vanilla and milk. Blend until smooth.
- Put butter or oil on the griddle and spread it around.
- Drop batter onto the griddle to make pancakes.
- Cut the corner of the filling baggie and swirl the mixture in a spiral on the pancake.
- Cook about 1-2 min. until the edges look dry and bubbles form on the surface.
- Flip the pancakes and cook for another 1 to 2 minutes until lightly browned and cooked in the middle.
- Drizzle icing on top of pancakes and enjoy!
