Cinnamon Roll Pancakes

Start your morning with a warm, delicious combination of classic breakfast favorites-cinnamon roll pancakes! Made right on the LoCo griddle, these fluffy pancakes are swirled with a sweet cinnamon filling and topped with a creamy glaze, giving you the irresistible taste of cinnamon rolls in every bite.

Ingredients:

For pancakes-

  • 1 ½ cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon of fine sea or table salt
  • 1 ¼ cups milk
  • 1 large egg
  • 5 tablespoons (70g) unsalted butter
  • 2 teaspoons vanilla extract

For filling-

  • 1/3 cup melted butter
  • 3/4 cup packed brown sugar
  • 1 tbsp cinnamon

For icing-

    • 2 cups powdered sugar (aka confectioner's sugar)
    • 2 tablespoon butter melted
    • 2 teaspoon vanilla extract
    • 4 tablespoon milk

    Directions:

    • Preheat your LoCo griddle to 400 degrees.
    • Melt the butter and set it aside. In a medium bowl, whisk together the flour, sugar, baking powder, and salt.
    • In a separate bowl, whisk together milk, egg, melted butter and vanilla extract.
    • Create a well in the center of your dry ingredients.
    • Pour in the milk mixture and stir gently with a fork until the flour is just incorporated. A few small lumps are fine. As the batter sits, it will start to bubble.
    • Mix the filling ingredients up and put in a baggie. Cut a hole in the corner for easy squeezing when you’re ready to use it.
    • For the icing, melt the butter. In a mixing bowl, combine powdered sugar, butter, vanilla and milk. Blend until smooth.
    • Put butter or oil on the griddle and spread it around.
    • Drop batter onto the griddle to make pancakes.
    • Cut the corner of the filling baggie and swirl the mixture in a spiral on the pancake.
    • Cook about 1-2 min. until the edges look dry and bubbles form on the surface.
    • Flip the pancakes and cook for another 1 to 2 minutes until lightly browned and cooked in the middle.
    • Drizzle icing on top of pancakes and enjoy!
