Ingredients

 

Meats

  • ½ lb bacon, chopped

  • ½ lb Mexican chorizo

  • 1 lb pork shoulder or country-style ribs, diced

  • 1 lb beef fajita meat (skirt, flank, or sirloin), thinly sliced

  • ½ lb smoked sausage or hot dogs, sliced

 


Veggies

  • 1 large white onion, diced

  • 1 red bell pepper, diced

  • 1 green bell pepper, diced

  • 3 Roma tomatoes, diced

  • 3 cloves garlic, minced

  • 1–2 jalapeños or serranos, finely chopped (optional)

 


Seasoning & Extras

  • 1 packet taco seasoning (or 2–3 tbsp homemade)

  • 12 oz Mexican lager beer (optional)

  • Salt and pepper to taste

  • Corn or flour tortillas for serving


Instructions 

 

  1. Preheat the Loco Cookers Disco to medium-high heat (around 375°F).

    Let the surface heat evenly for about 5 minutes before cooking.

  2. Start with bacon in the center of the Disco. Cook until crisp and the fat renders out.

    Push bacon up the sides to keep warm and let the fat pool in the center.

  3. Add chorizo to the center. Brown and crumble it, then move it up the wall with the bacon.

  4. Sear the pork shoulder in the center using the rendered fat. Cook until browned on all sides, about 6–8 minutes. Push it up the sides.

  5. Add beef fajita meat to the center. Sear quickly, about 3–4 minutes, then move it up the sides.

  6. Cook the sausage or hot dogs in the center until lightly browned, then push them up.

  7. Add onions and bell peppers to the center of the disco. Sauté in the rendered fat until softened, about 4 minutes.

  8. Stir in tomatoes, garlic, and jalapeños, and cook another 2–3 minutes.

  9. Combine everything — pull all the meats and veggies back into the center and mix well.

  10. Season with taco seasoning, salt, and pepper.

  11. Pour in the Mexican beer (optional) and let everything simmer 10–15 minutes, stirring occasionally until reduced and glossy.

  12. Serve straight off the LoCo Disco with warm tortillas, lime wedges, and your favorite toppings.
