DIY Flying Dutchman Burger (with Onion "Buns") on the LoCo Tabletop Griddle

If you’ve ever ordered the Flying Dutchman from In-N-Out’s not-so-secret menu, you know it’s a cheese-and-beef lover’s dream. But if you’ve also thought, “This could be beefier... and maybe a little less salty,” then you’re not alone.

That’s exactly why we decided to recreate it on the LoCo 16" Tabletop SmartTemp Griddle—with a few flavorful upgrades. The result? Honestly, one of the best burgers we’ve ever had.


🔥 Griddle It Like a Pro

The LoCo SmartTemp Griddle makes outdoor cooking precise and effortless with exact temperature control and even heating across its 265 sq. in. surface. Set it to 450°F, and you’re ready to sear, smash, and caramelize like a champ.


Ingredients

For the Burger:

  • 1 large yellow onion (cut into thick rounds)

  • 1–1.25 lbs ground beef (preferably 80/20)

  • 1 tbsp Dale’s seasoning sauce

  • Salt and pepper, to taste

  • 4 slices American cheese

  • Butter (for caramelizing onions)

For the Sauce:

  • 2 tbsp mayonnaise

  • 1 tbsp ketchup

  • 1 tsp mustard

  • 1 tsp red wine vinegar

  • 1 tsp salsa verde


Directions

  1. Preheat Griddle
    Turn your LoCo SmartTemp Griddle to 450°F and let it heat evenly.

  2. Prepare the Onion “Buns”
    Brush your onion rounds with butter and place them on the griddle. Let them cook slowly, flipping occasionally, until softened and deeply caramelized—about 10–12 minutes.

  3. Mix & Shape the Beef
    Combine the ground beef with Dale’s sauce, then form into loosely packed balls (about ¼ lb each).

  4. Smash Patties
    Place the beef balls on the hot griddle and smash them flat using a spatula or grill press. Season with salt and pepper. Cook until browned and crispy on one side, flip, then add a slice of cheese to each patty. Let melt.

  5. Make the Sauce
    Stir together mayo, ketchup, mustard, red wine vinegar, and salsa verde in a small bowl. Taste and adjust to your liking.

  6. Assemble Your Burger
    Use two onion rounds as the “buns” and sandwich one or two patties in between with a generous spoonful of sauce.
