Jalapeño Popper Fritters

These jalapeño popper fritters are a tasty twist that the whole family will love!

Ingredients:

  • • 4 strips of bacon
    • 12 oz corn kernels
    • 8 oz block of room temperature cream cheese
    • 3/4 cup all purpose flour
    • 1/2 cup shredded cheese
    • 1/4 cup sour cream
    • 2 jalapeños
    • 1 egg
    • 1 lime
    • 1 tbsp taco seasoning
    • 1 tbsp hot sauce
    • 1/2 cup ranch dressing
    • 1 tbsp garlic powder

Directions:

 

Set your LoCo griddle to 350 degrees.

Cook bacon until crispy.

Take off griddle, set aside.

Cut bacon into small pieces.

In a large container, mix together the bacon pieces, 12 oz. of corn, a block of
cream cheese, 1/2 cup shredded cheese, 1 egg, 3/4 cup flour, 1/4 cup sour
cream, taco seasoning and the juice of 1 lime.

Put spoonfuls of the fritter batter onto the griddle and press down to make them
flat. Cook 4-5 minutes on each side until they’re golden and crispy!

Remove from griddle and top with a mixture of ranch dressing, hot sauce and
garlic! Add cilantro as a garnish and enjoy.
