Ingredients

  • 1 everything-but-the-bagel seasoned bagel, halved

  • 2 Tbsp butter

  • 2 eggs

  • ½ cup shredded Monterey Jack cheese

  • 1 cup pulled pork

  • 2–3 Tbsp diced jalapeños

  • BBQ sauce (to taste)


Instructions

  1. Preheat the LoCo Griddle to 325°F. Add butter and let it melt, spreading evenly across the cooking surface.

  2. Toast the bagels. Place the halved bagels face-down in the butter and let them brown for 1–2 minutes. (Don’t worry—they’ll cook more in the next step.)

  3. Cook the eggs. Crack an egg into the center of each bagel half. Once the egg begins to set, sprinkle cheese on top. Cook until the cheese is melted and the eggs reach your preferred doneness. Remove from the griddle and set aside.

  4. Heat the pulled pork. Add the pulled pork to the griddle and cook for 2–3 minutes, flipping occasionally, until it’s heated through and slightly crisped on the edges.
