Shrimp Tacos

This is one delicious and very easy recipe to put together. If you love seafood, especially shrimp, then this is right up your alley. All the flavors just work together so well, the crunch from the lettuce and everything is just so delicious.

Ingredients

  • 2 Lbs. jumbo shrimp (cleaned and deveined)

  • 2 cups shredded purple cabbage 
  • 2 large avocados
  • 10 yellow corn tortillas 

 

 

Creamy Cilantro Lime Sauce 

 

  • 1/4 cup cooking oil 
  • 1/2 cup sour cream 
  • Juice of 1 large lime 
  • 2 tbsp chopped cilantro 
  • 1/4 cup chopped green onions 
  • 2 garlic cloves 
  • Salt and pepper to taste

 

Spice Mix 

  • 2 tsp garlic powder 
  • 2 tsp paprika powder 
  • 2 tsp ancho Chile powder 
  • 1 tsp onion powder 
  • 2 tsp lemon pepper 
  • 1 tsp cumin powder 
  • 2 tsp chili powder

Procedure

Start off by making the creamy cilantro lime sauce. In a food processor, add all ingredients and blend until smooth. Once blended, set aside. Grab a large bowl and add the cabbage, add 1/2 the creamy cilantro lime sauce and combine. Now cut open the avocados and smash them in a bowl creating a spread. Add juice of 1/2 a lime and salt to taste, set aside. Now preheat your LoCo griddle on sear mode,  season up the shrimp, adding some cooking oil to them to help the seasoning stick to the shrimp. Sear the shrimp 1.5 min per side- they cook quickly. Once all are cooked through, remove and set aside. Grab the tortillas and brush on a small amount of cooking oil to them, heating them up on the griddle about 2 min per side. The oil will keep them from becoming hard. Finally, let’s assemble the tacos. Add guacamole, the slaw, next the shrimp, followed by a generous amount of creamy cilantro lime sauce. 

 

 

Any other notes: You can add a serrano pepper to the sauce for an added kick. This recipe makes about 10 tacos.
