Recipe Description: If you have some left over turkey, then this recipe is just for you! These loaded quesadillas with guacamole are absolutely delicious.

Ingredients
- 1 shredded turkey breast
- LoCo Cookers Creole Seasoning
- 1 red bell pepper, diced
- 1 medium red onion, diced
- 8 12" flour tortillas
- 2 cups shredded mozzarella cheese
For the Apricot Glaze:
- 2 avocados
- 2 garlic clvoes
- 1 tomato
- 1/4 red onion
- 1 tbsp chopped cilantro
- 1 jalapeno pepper
- Juice of 2 lims
- Salt to taste
Procedure
For the Guacamole
Start off by making the guacamole. Dice the onions, jalapeno pepper, chop the cilantro and mince the garlic gloves. Set those aside and add the avocados without the skin and seeds to separate bowl. Smash them along with salt until smooth. Now add all the other ingredients combining the lime juice, cilantro, and place it in the fridge.
For the Quesadillas
Heat your LoCo griddle to 350F, adding about 2 tbsp of cooking oil. Add the diced bell peppers and onions, seasoning them with the LoCo creole seasoning. Once those are tender and fragrant start to reheat the shredded turkey with about 2 tbsp of cooking oil. Once the turkey is nicely browned combine with the peppers and onions. Turn the heat to low and place the turkey, onions, and peppers to that side. Heat the tortilla at 300F and hand a handful of cheese. Next add the turkey, peppers, and onions along with more cheese. Cover with the another tortilla and flip after 4-5 minutes. Once the tortilla is nicely browned and the cheese is fully melted, remove from the griddle. Let cool for 3 minutes before solving along with the guacamole.
