Two Ingredient Banana Pancakes

There’s nothing more fun than making brunch on your LoCo flattop griddle. And pancakes are an integral part of breakfast and the griddling experience. The beauty of a flattop is you can make many pancakes at once, perfect for feeding a crowd, and you still have room to throw on a pack of bacon or sausage at the same time.

This 2 ingredient pancake recipe gives all the feels of pancakes with no grains, making it a great option for anyone who is gluten free, grain free, “animal based”, ie, Paleo, or is looking to ditch refined carbs. The only two ingredients in these 2 ingredient pancakes are eggs and banana, that’s it! They surprisingly yield the fluffiest, naturally sweet pancakes you’ve ever had that are also much healthier than traditional pancakes made with bleached flour. They pair nature’s super food, eggs, which are loaded in vitamins and minerals, with banana, which offer a good amount of your daily percentage of potassium, making them a wholesome dish to start your day. But the true test is - are they kid friendly?

These pancakes are the preferred pancake style by my 8 year old, showing that these pancakes are not only good for you but also taste delicious. These pancakes are great as is, but if you want to be “extra” on special occasions like Mother’s Day or a birthday, you can mix in beet powder to make pink heart shaped pancakes, or organic lavender to make them over the top. Garnish with your favorite fruit and nuts and pair with breakfast sausage or bacon for a complete meal. Finish with maple syrup, (ditch the regular pancake syrup which is made with high fructose corn syrup) to keep these 2 ingredient pancakes healthy.


Ingredients:
Makes 6 Silver dollar sized pancakes, serves 1-2

  • 2 eggs
  • 1 banana
  • ¼ tsp baking powder (optional)
  • Dash cinnamon, optional

Directions:
Mash banana up in a mixing bowl. Add in two eggs and whisk with a fork until all lumps from the banana have been removed.

Heat your LoCo Flattop griddle to 375 degrees. Spread coconut oil in a thin layer to coat the griddle. Using a measuring cup with a spout, pour about 2 tbsp worth of pancake batter onto the griddle to make silver dollar sized pancakes. When the batter begins to bubble, flip the pancake over and cook on the other side.

Pair with maple syrup, fruit, nuts and even whipped cream to make these extra special. Enjoy these good for you, guilt free, surprisingly delicious 2 ingredient pancakes!
