Ingredients:
- 2 lbs. ground beef
- Salt & pepper to taste
- Hamburger buns (as needed)
- ½ C plain Greek yogurt
- ½ C crumbled feta
- 4-5 fresh mint leaves, chopped fine
- ¼ lemon, juiced
- ½ red onion, thinly sliced
- Lettuce as needed
For the Sauce:
- Combine the yogurt, half of the feta, mint leaves, lemon juice, and salt & pepper in a bowl. Mix until well combined, adjusting the salt to taste.
For the Smash burgers:
- Take the ground lamb out of the packaging and add to a bowl. Knead the meat into 8 equal-sized meatballs (~4 oz. each). Season with salt and pepper as desired (or a separate seasoning of choice) and set aside.
- Once the griddle has preheated, place the meatballs on the grill and allow to cook for 1-2 minutes. Using a spatula, press down on one of the meatballs to flatten (tip: place parchment paper on top of the meatball to prevent it from sticking to the spatula). Repeat this process with the remaining meatballs. Allow them to cook for 3-4 minutes, then flip the burgers and top each with a handful of feta cheese. Place a bowl or cooking dome over the burgers t this point to help the cheese melt faster (optional).
- Once the feta has melted, transfer the burgers to a plate and turn off the griddle burner.
To Finish:
- Place a hamburger bun on a plate and slather with prepared sauce. Next, top with lettuce and red onion slices as desired. Finally, add two stacked lamb smash burger patties and top wit the other half of the bun.
- Serve with your sides of choice and enjoy!
